• Breakfast: Chia pudding, granola & raspberries

    Chia seeds are true superfood. They are packed with proteins, fibers, vitamins, minerals, vegetable oils and antioxidants. If you look at the contents on the back of a bag of chia seeds, you will see they contain quite a lot of carbs though. Most carbs, however, counts in as fibers and won’t affect your blood glucose.    

    Two months ago I had never worked with chia. My first chia pudding was a real disaster; it was tasteless and had a strange texture. Now I have chia pudding for breakfast or an in-between meals snack every other day. The possibilities to vary it are endless. I have certainly failed as many times as I’ve succeeded but that is how you learn. This one is a safe bet, however.

    Chia pudding, 2 people

    3 deciliters cashew milk (Further down, I share how you can make your own!)

    4 tablespoons chia seeds

    1 tablespoon ground cardamom

    1 teaspoon vanilla powder

    Mix all ingredients and leave to set in the fridge over night. The chia seeds form a yellowish coat, leading to a pudding-like texture.

    Home made cashew milk

    7 deciliters water

    3 deciliters cashews, rinsed and soaked for at least 8 hours

    ½ teaspoon vanilla powder

    Mix everything in a powerful blender until completely smooth. Store in refrigerator.

    Granola 

    6 deciliters whole buckwheat

    2 deciliters cashews

    2 deciliters almonds

    2 deciliters sunflower seeds

    1 deciliter pumpkin seeds

    1 deciliter linseeds

    3 tablespoons water

    2 tablespoons sunflower seed oil

    1 tablespoon liquid honey (exclude if you don´t want any sweetener!)

    1 tablespoon ground cardamom

    Thoroughly rinse buckwheat. Coarsely chop cashews and almonds, and then mix together buckwheat, nuts and seeds in a big bowl. In another bowl, mix water, oil, honey and cardamom. Pour the liquid mix over the dry ingredients and mix everything around. Put your granola in a baking tray or a roasting pan and roast at 200°C/392°F for 15 minutes. Make sure to mix your granola around every 5 minutes so it doesn’t get burned.

    You also need some fresh raspberries for serving.

    Arranging your chia pudding

    Personally I prefer to arrange my chia pudding in layers, because I think it looks beautiful. I start with some chia pudding, and then I continue with granola and raspberries, layer by layer. Obviously, I’m not always having my chia pudding like this. If in a hurry I just mix everything together in a nice bowl so I can start eating right away.
